Head Chef

Job Title - Head Chef

Salary - £45,000 - £55,000

Position - Full time

The Mansion has a unique and exciting opportunity for an Experienced Head Chef to join our team.

This multifaceted venue offers over 25,000 square feet of Victorian splendour, situated within 9 acres of landscaped grounds and woodland.

The venue is perfectly located between Fareham and Southampton, just minutes from junction 9 of the M27 (Whiteley).

Hotel

We have 30 large characterful hotel suites that are equally suited to leisure or business travellers.

Food & Beverage

Our premium casual dining style aims to offer Modern British food 7 days per week with service including breakfast, lunch, dinner, afternoon tea, Sunday roasts and private dining in elegant surroundings.

We have a 65+ cover restaurant within the historic building itself plus over 100 outdoor dining covers, 6 unique garden dining pods, an outdoor cabin bar, a comfortable guest lounge, a 24 cover private dining room and a premium cocktail bar.

When the weather permits, we have proven that we can offer our customers a unique outdoor experience, regularly hosting sell-out BBQ's and summer parties.

The venue catering is serviced by 2 professional kitchens.

Events & Functions

We are actively growing this very important sector of the business, providing exceptional surroundings and service for weddings, celebrations of life, bridal & baby showers, private parties and corporate events.

Our Victorian Orangery has its own dedicated bar and has already hosted some exceptional events.

With a maximum of 60 function dining covers, we aim to provide a high quality of food and service that is hard to find locally elsewhere.

The Right Candidate will be:-

An experienced, flexible and motivated Head Chef able and determined to give an exceptional level of experience for all of our customers and guests at The Mansion.

Able to pro-actively and confidently lead a 14+ kitchen team across all food based offerings whilst working closely, positively and receptively with the other HOD's, Senior Management and Directors.

Able to demonstrate at least 2 years' experience within a similar sized operation delivering quality food output whilst working to agreed margins and within an acceptable labour budget.

Primary Duties & Responsibilities Include:



* Prepare seasonal menus to ensure food led propositions maintain relevance to target markets and optimise value of seasonal product availability within the restaurant concept.


* Ensure that all food dishes are fully specified and costed and that no products are delivered to our customers that do not fully meet specification.


* Provide team with the clear purpose they require, support with relevant learning experiences and regular feedback on individual /team performance.


* Maintain optimum productivity, food cost and expense performance in line with targets - maintain required records on food waste, waste collection etc and work with cost-effective yet consistent approved suppliers.


* Ensure 'change' initiatives are implemented effectively with high levels of team engagement.


* Lead the kitchen team to deliver the targeted KPI's in line with the agreed dish standards and kitchen management standard operating procedures.


* Ensure a safe, secure and stimulating environment is provided for team members in the kitchen and supporting areas.


* Meet and exceed all statutory guidelines with a view to achieving and maintaining a 5

* hygiene rating with EHO.


* Ensure all required equipment maintenance regimes are adhered to thereby minimising breakdowns, repairs and replacements.
